The Rising which was released in March 2016 is described as the first hint of the product that will rise from the land in Tipperary.
‘The Rising’ takes its name from the 100 year anniversary of the Irish Rising in 1916; a significant uprising which would pave the way for Ireland’s eventual Independence some years later. In addition to its historical reference, it was the first product that the Tipperary Boutique Distillery released as a new independent Irish whiskey and one which Jennifer, Liam and Stuart very much consider to be their Rising.
A limited supply of just 1,916 bottles of the Rising were produced and each bottle given its own particular batch number.
Tasting Notes on The Rising
This single malt is crafted from a batch of only 6 casks, each one matured in Ireland for over 11 years and carefully selected for the smoothness and character of its spirit.
The nose is rich and sweet; honey and vanilla with hints of grain and a touch of underlying fruits. The mouth has a smooth, creamy texture; with vanilla to the fore, chocolate and notes of toasted wood develop and are followed by lightly drying tannins and a peppery spice in the warming finish. The finish of this whiskey lingers long and pleasant leaving a hint of almonds married with spices.
